In a pot boil 1 cup of Petite Crimson Lentils, 2 cups of water, 2-3 Cloves of Garlic and a Bay leaf.
Discard Bay Leaf and Spoon 1 cup of soupy lentil mixture into a blender. Add
1/2 medium cucumber
3-5 fresh tomatoes
A small handful of fresh basil
1/4 cup of soft sun-dried tomatoes
Lime juice to taste
1 Tablespoon of Chili Garlic Sauce (don’t skip this)
Don’t forget to salt and pepper to taste!
Blend all ingredients in a blender until smooth. Transfer to refrigerator for 30 minutes. Garnish with fresh basil and black sesame seed and enjoy!
