Vegan or Vegetarian Bites:
Sweet potatoes
White or brown small mushrooms
Pesto (for vegetarians)
Olive oil
Nutritional yeast ( for Vegas )
Baby spinach
Salt
Pepper
Toothpicks
Meat Lovers Date and Bacon Bites:
Medijool Dates (other types of dates are too dry)
Bacon (try to buy organic)
Extras: blue cheese (make sure you get a good one or the taste will be compromised)
Goat cheese
Roasted Salted Almonds
Pistachios
Preheat oven to bake 400 degrees. Cut sweet potatoes in half ( do not remove skin). Put facing up on a cookie sheet and pour olive oil, salt, and pepper on cut halves. Bake for 40 minutes
Clean mushroom with a paper towel. Remove the stem of the mushrooms. Fill mushrooms with pesto for vegetarians. If making the vegan version pour a bit of olive oil into the mushroom cavity and fill with nutritional yeast.
3. Take dates and remove pit. Wrap dates with half of a bacon strip about 4.5 inches long. If
You are stuffing dates remove pit, stuff with your choice of stuffing and wrap with bacon.
4. When sweet potatoes are finished baking, preheat oven to 450 broil. LEAVE RACK IN
MIDDLE POSITION OF THE OVEN.
5. Place mushrooms and dates wrapped in bacon on roasting pan. Depending on your oven, roast for about 4 minutes.
6. After 4 minutes check mushroom and either remove or continue to cook with dates after turning dates over, for another four minutes
7. Take sweet potatoes once they have cooled down, and peel the skin off. Cut into cubes that
are a bit smaller than the size of the mushrooms.
8. Once mushrooms are finished cooking, take a leaf of baby spinach to remove stem and place on top of the mushroom. Then place sweet potato square on top of spinach and secure with a toothpick.
